Crockpot Roast Beef

My dad is visiting and I wanted to make a special dinner for his arrival so I made a no-stress crockpot roast beef dinner. I woke up and cut some veggies and put them in a thin later on the bottom. You do not want meat stewing on the bottom so this raises the meat up and the carrots, leeks, celery and garlic will infuse the juices with their flavour which I used to make the gravy.

I took a thin knife and punched some holes on the top of the roast so I could fill the spaces with slivers of garlic. I also covered the roast with salt and pepper. Heating up some canola oil in a pretty-hot pan, I then seared the meat on all sides, giving each one time to develop delicious colour.

I deglazed the pan with some white wine and beef broth, scraping the bits off the bottom and drizzled it on top of the roast:

On low, the crockpot slowly cooked the roast all day and by the time we had dinner it was a melt-in-your-mouth consistency, absolutely beautiful. Now we can live on roast beef sandwiches during his visit!

Less time cooking and more time catching up with my dad, the crockpot really took the work out of the kitchen but not the flavour for me yesterday.

I love crock pot cooking. I think its WAY underused... I have to admit my fav crock pot recipe is veggie lasagna.

K, your Apple pie looks amazing, takes me right back to my childhood too. So many people don't make their own pie dough anymore - its WAY easier to get it frozen - I think my Grandmother would come back from the dead tho and hit me!

I bet your house smells wonderful everyday! :D

Suzie - I found your blog this summer looking for a fool-proof way to glaze pecans. Loved your method and have been using it ever since. Just took a few minutes to glance through other recipes on your blog and wondered what cut of meat you use for this crock pot roast? Looks yummy and my husband loves roast.

Hi Abby! So glad the candied pecans worked for you, aren't they awesome? I love them too, so easy.

When it comes to cut of meat I have two issues: will it fit in my crockpot and is it cheap? I have used the cheapest meat around with excellent results and for this Thanksgiving, I used a beautiful sirloin roast (I think?) and it was astoundingly beautiful too. Now some people might find that blasphemous but hey, I could afford it and this is the easiest way to make roast beef so why not??? I hope that helps!
