
My fridge is finally full again and it has gotten warm and finally feels like summer. Which means I do not want to turn my oven on! As a result, I have been depending on summer classics like these floating mandarin oranges in orange Jello. Perfect for a cool day.
Eating Jello always takes me back to my childhood. The challenge of eating these cold neon sloppy contraptions is still fun for me even as an adult. Whatever I can do to keep cool in the kitchen and yet still have interesting food sounds good to me.
It is the time of year to make salads and the closest to a hot meal in my house these days is a panini! What foods keep you cool?
Oh and the trick to making fruit float in Jello is to make it as usual and then after about an hour to two hours in the fridge, once the Jello is starting to set, gently add the fruit. Yummy and fun!
