Lorraine, my mother-in-law who you all know so well now, loves orange pineapple ice cream. Which no one seems to make anymore. I personally have never had it. I thought it would go nicely with the Sour Cream Coffee Cake so I decided to experiment in the kitchen.
You would think making ice cream is easy but I find it quite challenging. If you use a recipes that does not call for making a custard, your life is more simple (and potentially less flavourful). In general you are just combining whipping cream with the flavouring and putting it in your ice cream maker. What could go wrong?
In fact I had made this Orange Ice Cream before and it is nice but the orange flavour is super subtle. It is more like a hint than a true flavour. I decided to use a can of orange concentrate instead of 2 cups of orange juice and a cup of my pineapple syrup.
In here you have 1 1/2 cup of whipping cream, 1/2 cup of light cream, orange concentrate, pineapple syrup, juice and zest of 1 tangerine, some lemon juice, orange extract and 1 tsp of Vanilla Bean Paste. I tasted it. Woah Nellie! Tart! I whisked in some icing sugar, got out the ice cream maker and hoped for the best.
This made so much liquid that I had to make it in two batched. By the way, ice cream makers are very easy to use but there is one rule. You HAVE to have them in the freezer for a minimum of 12 hours, 24 hours is best. I just keep mine in there since I am terrible at planning ahead. Then you just put the thing together, pour in the liquid and turn it on. Let it go until it sounds like it is struggling. It takes about 20 minutes to make the ice cream and I threw in the pineapple tidbits after about 10 minutes.
Yup, I had definitely had to make two batches of the ice cream! The whipping cream makes the volume increase significantly.
This is powerful ice cream! Crazy tart, lip smackin' actually, a bit of a shock to eat. Not what I was going for but so far everyone who has tried it has liked it despite the shocking flavour. I will definitely work on this recipe, it is far from perfect and not what Lorraine really loves but I tried. This foodie will not give up!
